Naturally processed at the Aricha Wubanchi station in Ethiopia's Yirgacheffe woreda and roasted light in our Scarborough roastery, this single origin is built for pour-over drinkers who want maximum clarity: blueberry at the front, sparkling citrus through the middle, and delicate florals lifting the finish. This coffee's home. 1:16 ratio, medium-fine grind, 94 to 96°C water — light roasts extract best with hotter water. Blueberry up front, citrus through the middle, florals as it cools.

AeroPress

15g coffee, 220g water at 95°C, 2 minute steep, slow press. Produces a juicy, concentrated cup where the blueberry and citrus punch above their weight.

Flash-brew iced

Brew pour-over at double strength directly over ice. The citrus and florals stay crisp and the blueberry turns refreshing — a summer standout that cold brew's long steep would soften.

About this coffee +

Aricha is arguably the most famous washing station name in natural process coffee, and this is its brightest expression. Located in the Yirgacheffe woreda of Ethiopia's Gedeo Zone, the Aricha Wubanchi station receives hand-picked cherries from roughly 1,700 smallholder farmers, sorts them for ripeness, and sun-dries them whole on 180 raised drying beds over several weeks. That slow, careful drying is what transfers the cherry's fruit character into the bean — the blueberry that made Aricha's global reputation.

The green lot behind this roast is a Grade 1 natural — Ethiopia's highest export classification, permitting near-zero defects — sourced through Primrose, the award-winning Ethiopian producer whose station network supplied the coffee used by the 2018 World Barista Championship winner. We roast this same lot to two levels. The medium roast rounds the blueberry into jam and adds a brown sugar base. This light roast goes the other direction: it preserves the citrus and floral top notes that medium development trades away, keeping the cup bright, sparkling, and transparent. Same station, same lot, two genuinely different coffees.

Light roasting a dense Grade 1 natural is a precision job — under-develop and the cup turns grassy and sour, push too far and the delicate florals vanish. We drop this roast just past first crack, where the blueberry is fully formed, the citrus is vivid, and the floral finish comes through clean. Choose the medium roast if you want a rounder, jammier blueberry with a brown sugar finish, or if you pull espresso — the light roast is developed for filter clarity, not pressure extraction. Is light roast coffee stronger than dark roast?

By caffeine, light and dark roasts are nearly identical when measured by weight — the difference is negligible. What people usually mean by strong is flavour intensity, and there light roast is different rather than weaker: this Aricha light roast is intensely flavourful, but its intensity is fruit, acidity, and aromatics rather than roast, smoke, and bitterness. If you are coming from dark roast coffee, expect a cup that reads more like a bright berry tea than a classic bold coffee — that is the intent, not a flaw.

Why is this coffee best for pour-over and filter brewing?

Light roasts are denser and less soluble than darker roasts, so they extract best with hotter water, longer contact time, and the gentle, even extraction that filter methods provide.
