Ethiopia Sidama is a naturally processed green coffee from the Sidama zone of southern Ethiopia, grown at 1,700 to 2,300 metres above sea level among heirloom Arabica varieties native to the region. Natural process greens require slightly more drying time than washed lots due to residual fruit sugars in the bean. Keep charge temperature moderate and allow a thorough drying phase before entering the Maillard stage. First crack on high-altitude naturals can be less audible than washed lots. Listen carefully and time from the first audible crack.

Medium roast

Drop 45 seconds after first crack begins. Blueberry and fruit character is most vivid. Nutty sweetness present. Best for filter, pour-over, and drip.

Medium-dark roast

Drop 75 seconds after first crack begins. Fruit recedes toward dried berry and dark chocolate. Body increases. Wine-like depth becomes more pronounced. Good for espresso.

Dark roast

Drop 10 seconds after second crack begins. Bold, roasted, and full-bodied. Fruit notes largely replaced by dark chocolate and smoky sweetness. Ideal for espresso blends and French press.
