Ethiopia Sidamo Hube is a naturally processed specialty green coffee from the Hurro Baro area of the Sidamo (Sidama) zone in southern Ethiopia, grown at 1,980 to 2,200 metres above sea level on iron-rich red-brown volcanic soil. The 2025/26 crop features the 74110 and 74112 Arabica varieties — two of the most prized JARC-selected cultivars in the Ethiopian coffee system, known for their balanced structure, fruit complexity, and cup consistency. Full matured red cherries are selectively hand-picked from smallholder backyard farms and sun-dried on raised beds, concentrating the berry, winey, and stone fruit character that makes Sidamo natural lots among the most sought-after Ethiopian green coffees for home roasters and commercial roasteries worldwide. Sidamo Hube is a high-density natural green at 1,980 to 2,200 masl with a density reading of 876. Natural process greens carry residual fruit sugars that require a thorough drying phase before entering Maillard. Use a moderate charge temperature, allow extra time in drying, and do not rush toward first crack. First crack on high-altitude naturals can be less audible — listen carefully and begin timing from the first consistent cracking sounds.

Light roast

Drop at first crack. Vibrant berry and floral character at peak intensity. Citric acidity most prominent. Best for pour-over and Chemex where fruit clarity shines.

Medium roast

Drop 45 seconds after first crack begins. Berry and stone fruit develop toward richer sweetness. Winey depth becomes more structured. Body increases. Ideal for filter and espresso.

Medium-dark roast

Drop 75 seconds after first crack begins. Fruit recedes toward dried berry and dark chocolate. Winey depth persists. Full body. Strong espresso blend base with Ethiopian character.

Dark roast

Drop 10 seconds after second crack begins. Bold and roasted. Fruit largely replaced by dark chocolate and smoky sweetness. Heavy body. Suitable for espresso blends and French press.

Hube is a kebele (village-level administrative unit) within the Hurro Baro area of the Sidamo zone in southern Ethiopia. The Sidamo zone — now officially named Sidama following regional restructuring in 2020 — has produced some of Ethiopia's most consistently celebrated specialty coffee for decades. The Hurro Baro area sits at the higher end of the zone's elevation range, between 1,980 and 2,200 metres above sea level, on iron-rich red-brown volcanic soil that contributes the mineral structure and fruit complexity that define the best Sidamo lots.

The 74110 and 74112 varieties used in this lot are JARC-selected cultivars developed by the Jimma Agricultural Research Centre, Ethiopia's primary coffee research institution. The three most common varieties in the Sidama region are 74158, 74110, and 74112, with a cup profile of balanced acidity and body. Both 74110 and 74112 were selected for their cup quality, disease resistance, and productivity under high-altitude conditions. They produce small to medium-sized beans with dense structure and concentrated flavour — exactly the profile present in this Hube lot.

Cherries are harvested selectively by hand at full maturity from backyard garden farms, a traditional Ethiopian smallholder model where coffee trees grow alongside food crops and shade trees. This selective picking, combined with natural sun-drying on raised beds, concentrates the fruit sugars that produce the berry, winey, and stone fruit character in the cup. Water activity at 0.63 and moisture at 11.3% confirm a well-dried, stable green coffee ready for roasting or storage.
