El Salvador Cuzcachapa is a medium roast specialty coffee from the Cuzcachapa cooperative in western El Salvador, grown at 1,200 metres above sea level and processed using the washed method. Washed processing removes the cherry before drying, producing a clean, transparent cup where the bean's natural character comes through without interference. The result here is exactly that — milk chocolate, toasted almond, and a bright lift of orange zest, with a medium-high body and a smooth, sweet finish. The Cuzcachapa cooperative has been producing some of El Salvador's most consistent specialty coffee for decades. Located in the western highlands at 1,200 metres above sea level, the cooperative farms under shaded canopies that slow cherry development and concentrate sugars in the bean. It has served as the official processing mill for the Cup of Excellence competition in El Salvador since 2005 — a benchmark of quality that few cooperatives in Central America can match.

Washed processing is the reason this cup is so clean and defined. After harvest, the cherry skin is removed immediately and the beans are fermented briefly in water before being dried. This strips away any fruit influence and lets the bean speak on its own terms. What you get is a transparent, well-structured cup where every flavour note — the milk chocolate, the almond, the citrus — is distinct rather than blended together.
