Roasting guide +

At 1,850 masl this is a high-density green coffee. Expect a longer drying phase and slightly higher first crack temperature than lower-altitude Colombian lots. The Castillo and Colombia varieties are well-suited to both manual and drum roasting and respond reliably to a wide range of development approaches. Pour-over and Chemex are the recommended brewing methods to highlight the clarity and nuance of this lot in the cup.

Light roast

Citric lemon brightness leads. Floral and fruit undertones emerge. Cocoa in the background. Ideal for pour-over and Chemex where clarity shines.

Medium roast

Cocoa, almond, and chocolate develop fully. Citric acidity softens to a balanced brightness. Creamy body at its most expressive. Best all-round roast level for this lot.

Medium-dark roast

Dark chocolate and nut character deepens. Long chocolatey finish becomes more pronounced. Body stays full and creamy. Suitable for espresso and milk-based drinks.

About this coffee +

Hacienda La Pradera is a single farm in Aratoca, Santander, operated by producer Oscar Daza at 1,850 metres above sea level in the northeastern Colombian Andes. Santander is a less commercially prominent growing region than Huila or Nariño, but its high-altitude farms produce coffee with exceptional density and cup complexity that increasingly attracts specialty buyers looking beyond the most established Colombian appellations. This lot scored SCA 84.0 — above the 82 to 83 range typical for strong Huila lots — with perfect 10s for uniformity, sweetness, and clean cup across five tasted samples.

Hacienda La Pradera holds a certification stack that is among the most comprehensive available for a Colombian specialty green coffee. Bird Friendly certification from the Smithsonian Migratory Bird Center requires shade-grown farming under criteria that protect migratory bird habitats and maintain forest canopy cover above the coffee. This is the gold standard for environmental sustainability in coffee farming. Organic certification across six bodies — Ecocert, the Colombian Coffee Federation, USDA, JAS, COR, and KOR — confirms that no synthetic pesticides, herbicides, or fertilisers are used at any stage of production, and that the certification is recognised across North American, Japanese, European, and Korean markets.

The washed process and mechanical drying produce a clean, structured green bean where the terroir speaks clearly. The cupper noted cocoa, coconut, almonds, nuts, chocolate, and lemon on the palate, with citric acidity, a creamy body, and a long chocolatey finish. This is a complete, layered cup that rewards careful roasting and rewards the brewer who takes the time to let it cool and develop in the cup. One of the most traceable and certified specialty green coffees available from Canada.

Frequently asked questions +

What is Bird Friendly certification?

Bird Friendly is a certification issued by the Smithsonian Migratory Bird Center, the research arm of the Smithsonian Institution. It is the most rigorous shade-grown standard in the coffee industry. To qualify, farms must maintain a forest canopy of specific height and density above the coffee, meet minimum biodiversity standards for tree species diversity, and hold current organic certification. Hacienda La Pradera meets all three requirements. Buying Bird Friendly certified coffee directly supports the preservation of migratory bird habitats in Colombian growing regions.

What does the SCA 84.0 score mean for this lot?

The SCA scores coffees on a 100-point scale. Any score above 80 qualifies as specialty grade. Scores above 84 are classified as excellent, placing this lot at the lower boundary of that tier. The 84.0 score includes perfect 10s for uniformity, sweetness, and clean cup across five tasted samples, and individual attribute scores of 7.75 across flavour, aftertaste, acidity, body, balance, and overall impression. This is a meaningfully higher scoring lot than the SCA 82.5 Colombian Huila lots and reflects the combination of altitude, farm management, and organic growing practices at Hacienda La Pradera.

Can I use this lot's organic certifications for my own products?

If you are a roaster in Canada purchasing this green coffee and roasting it for sale, you may be able to reference the COR and USDA organic certifications on your product depending on your own certification status. Organic labelling regulations require that the entire supply chain, including the roaster, holds valid organic certification. Contact your organic certifying body to confirm your requirements before making organic claims on your finished product.

How should I store this green coffee?

Store in a cool, dry place away from direct light and moisture. Green coffee is stable for 12 to 18 months when stored correctly. For 15 lb and 30 lb quantities, hermetic storage such as GrainPro liner bags is recommended to maintain moisture content and preserve the aromatic compounds that make this lot distinctive.

Is this available for wholesale?

Yes. Colombia Pradera Organic is available for wholesale supply to roasteries and commercial buyers. The 30 lb size is suited to production roasting. For volume pricing, recurring supply arrangements, or certification documentation, contact us directly or visit our wholesale inquiry page.
