Caramel, chocolate, and soft citrus. Balanced and dependable — a classic espresso profile with clean sweetness.
Ethiopia Guji
Bold fruit, dark chocolate, and winey depth. The most expressive shot in the bundle — dried berry sweetness through milk.
Brazil Peaberry
Chocolate, hazelnut, and caramel. Round peaberry beans roast evenly — heavy crema and a smooth, nutty base for milk drinks.
Peru
Stone fruit, honey, and caramel. Gentle acidity and soft sweetness — the smoothest cold brew of the six.
Colombia Betulia
Sugarcane sweetness, lime, and chocolate. A high-scoring Santander lot — bright, sweet espresso with real complexity.
Ethiopia Harrar
Wild blueberry, dark chocolate, and dried fruit. Heavy, syrupy, and wine-like — the boldest cup in the bundle.
Brewing with an espresso machine +
Every coffee in this bundle is roasted to medium-dark specifically because it is the roast level espresso machines are happiest with. The developed sugars extract quickly and evenly under 9 bars of pressure, producing dense crema, full body, and balanced shots without the sourness lighter roasts can show on home espresso machines.
Starting recipe: 18g in, 36g out, 26 to 30 seconds. Grind fine and adjust one step at a time — if the shot runs faster than 25 seconds, grind finer; slower than 32 seconds, grind coarser.
Each origin will dial in slightly differently. The Brazil Peaberry and Colombia Huila are the most forgiving starting points. The Ethiopia Guji and Harrar reward slightly longer ratios (1:2.2) to open up their fruit. Milk drinkers: the Brazil Peaberry and Harrar cut through steamed milk most powerfully.
Brewing cold brew +
Medium-dark roast is the ideal roast level for cold brew. The extended low-temperature steep extracts the developed chocolate and caramel sweetness fully while the low acidity of the roast level keeps the concentrate smooth rather than sharp. Lighter roasts under-extract in cold water; darker roasts turn ashy. Medium-dark is the cold brew sweet spot.
Starting recipe: 100g coarsely ground coffee to 1L cold filtered water. Steep 16 to 18 hours in the fridge, strain through a paper filter, and dilute the concentrate 1:1 with water or milk over ice. Keeps refrigerated up to one week.
For classic smooth chocolate cold brew, start with the Brazil Peaberry or Peru. For a fruit-forward cold brew that tastes like berry iced tea, the Ethiopia Guji and Harrar are exceptional — the wild blueberry character concentrates beautifully in a long steep.

Do I need a grinder for this bundle?
The bundle ships as whole beans, and for espresso machines a burr grinder is strongly recommended — espresso requires a fine, consistent grind that pre-ground coffee loses within days of grinding. For cold brew a grinder matters less since the coarse grind is forgiving, and many buyers use an inexpensive burr grinder or grind coarse at purchase. Every bag is roasted fresh to order in our Scarborough roastery and shipped within days of roasting. Do not refrigerate — the moisture and odours degrade the coffee faster than room temperature storage.
