Colombia Huila Supremo is a washed specialty green coffee from Garzon, in the Huila department of southern Colombia, grown by the producer Alma del Huila. This is the Supremo grade — Colombia's largest traditional export screen size — from the same farm and region as our Huila Excelso, milled and sorted to the larger bean size. Grown at 1,250 to 1,800 metres above sea level across Cenicafé 1, Castillo, and Colombia varieties, this 2025/26 fresh harvest lot scored SCA 84 plus. The cup is balanced and clean: milk chocolate, panela, almond, and orange, with bright citric acidity carrying a distinctly Colombian sweetness through the whole cup. Density at 1,036 g/L. Available in 1 lb, 2.5 lb, 10 lb, 15 lb, and 30 lb.

Roasting guide +
At 1,036 g/L this is a moderately dense washed green coffee. Because Supremo beans run larger than Excelso, expect a slightly slower roast curve to first crack — the extra mass takes a touch longer to heat through evenly. Give it that time rather than pushing gas to compensate; the balanced, clean profile of this lot rewards a steady, unhurried roast over all three common levels.
Medium roast
Drop 45 seconds after first crack. Orange and almond most defined. Panela sweetness clean and bright. Excellent for filter, drip, and single origin espresso.
Medium-dark roast
Drop 75 seconds after first crack. Milk chocolate deepens, citrus softens to background warmth. Fuller body. A dependable, balanced espresso base that performs well under milk.
Dark roast
Drop 10 seconds after second crack. Bold chocolate and roasted sweetness. Heavier body. Reliable for French press and commercial dark roast blends.
About this coffee +
Garzon is a municipality in the Huila department of southern Colombia, part of the coffee-growing corridor along the upper Magdalena River valley that has made Huila one of Colombia's most recognised specialty coffee departments. This lot is grown by Alma del Huila, the same producer behind our Huila Excelso, at 1,250 to 1,800 metres above sea level across Cenicafé 1, Castillo, and Colombia varieties — Colombian-bred cultivars selected for disease resistance and consistent cup quality.
Supremo and Excelso are both traditional Colombian export grades, but they classify different things than most buyers expect. Rather than describing cup quality directly, both grades are screen-size classifications applied during milling: Supremo refers to the largest bean size in a lot, screen 17 and above, while Excelso covers a broader, slightly smaller size range. Larger beans generally come from the most mature, fully developed cherries in the harvest, which is why Supremo has traditionally been considered the premium size grade in Colombia's export system — though cup quality itself is determined separately by variety, terroir, and processing, not size alone.
The milk chocolate, panela, almond, and orange profile in this lot reflects both the Garzon terroir and Alma del Huila's washed processing. Panela is unrefined whole cane sugar, a staple sweetener across Colombia, and the note describes a rustic, warm sweetness distinct from refined white sugar or caramel — a flavour descriptor you will see often in well-processed Colombian washed coffees. Density at 1,036 g/L and water activity at 0.59 confirm a properly dried, stable lot ready for roasting or extended storage.

Frequently asked questions +
What is the difference between this Supremo and your Huila Excelso?
Both come from the same producer, Alma del Huila, in the same Garzon growing area — the difference is bean size grade rather than origin. Supremo is screen 17 and above, the largest traditional Colombian export size; Excelso covers a broader, slightly smaller size range. Because larger beans tend to come from the most fully mature cherries, Supremo has historically been considered Colombia's premium size classification. If you already know and like our Huila Excelso, this Supremo comes from the identical farm and terroir with a marginally larger, more uniform bean for roasting.
What does "Supremo" actually mean on a coffee bag?
Supremo is a Colombian export grading term based purely on physical bean size, measured by passing beans through screens with holes of specific diameters. It says nothing directly about flavour, variety, or cup score — those are separate quality measures. What Supremo does confirm is a large, consistent bean size, which matters practically for roasters: more uniform beans absorb heat more evenly, producing more consistent development across a roast batch.
What is panela and why is it used to describe this coffee's flavour?
Panela is unrefined whole cane sugar, made by boiling down fresh sugarcane juice without separating out the molasses — a staple sweetener throughout Colombia and much of Latin America. In cupping notes, "panela" describes a warm, rustic sweetness distinct from refined white sugar or caramel, often showing up in well-processed Colombian coffees from cane-growing regions like Huila. It is one of the most distinctly Colombian flavour descriptors you will encounter in specialty coffee.
How should I store this green coffee?
Store in a cool, dry place away from direct light and moisture. Green coffee is stable for 12 to 18 months in correct storage conditions. We ship all our green coffee in 9 layer hermetic Ecotact bags to preserve moisture content and the aromatic character of this lot between roasting sessions.
